Mexican Street Corn Fries

Emma has been talking about Mexican Street Corn for weeks. She insisted we create our own version – she had been hearing about it all over recently and knew both of us would love it. We’re always trying to create new recipes and this is a perfect example of that. With a unique combination of ingredients, your every day French fries are transformed into something so much more. Its so fresh and flavorful, it’s impossible to stop eating them. Only a few things are needed, making this tasty treat easy to replicate, and at a bargain.

We like to serve this recipe with a side of guacamole. This is definitely optional and classic elote isn’t usually served with guac, but it’s a great dipping sauce for the fries. We like to use Frontera’s spicy guacamole mix. You can find it at your local grocery store more than likely, and it’s so simple to use. All you need is the mix and a couple avocados!

Mexican Street Corn Fries

This french fry recipe is a twist on your classic fries. They’re delicious and packed with flavor!

Ingredients

  • 3
    large
    baking potatoes
  • 1
    inch
    deep of vegetable oil in a large frying pan
  • 1
    can
    whole kernel yellow corn
  • 2
    tbsp
    mayonaise
  • 2
    tbsp
    sour cream
  • 2
    tbsp
    parmesan cheese
  • 1
    dash
    garlic powder
  • 1
    tsp
    cayenne pepper
  • 1
    tsp
    red chili powder
  • 1
    lime
    cut into wedges
  • 1
    side
    of guacamole
    optional

Instructions

  1. Begin heating vegetable oil over medium heat in a large frying pan.

  2. Cut your potatoes into fries. I cut mine into wide steak fries. I like to cut mine this way so that it holds the toppings better!

  3. Begin frying your fries in single layers. Once they start browning a little, flip them over and separate them if necessary.

  4. Remove fries once they are a golden brown throughout.

  5. Heat corn in a small sauce pan.

  6. Toss fries in salt, garlic powder, and 1 tbsp of Parmesan cheese.

  7. Transfer them to a plate and top them with corn, sour cream, mayo, red chili powder, cayenne, and lime juice from the wedges.

  8. Serve with a side of guac and enjoy!
