Low Carb Taco Bake

Living a low carb lifestyle for many people can mean sacrificing the best part about food: bold flavors. We’ve spent the last few months trying our best to come up with ways to achieve different flavor in our diet. I love Mexican food probably more than anything else in the whole world, so trying to incorporate those flavors into our diet is a must for me. This taco casserole is the answer to my prayers!

Not only is this recipe flavorful, but it’s incredibly simple as well! Just a few ingredients and you have a dish that the whole family will enjoy. The secret to it being so delicious? The queso. Our low carb queso is the best of its kind. I actually prefer it to most other queso recipes I’ve tried – low carb or not.
We accidentally fell off the wagon this weekend and had a cheat meal, so making this recipe was the perfect way to get back on track. It feels like a guilty pleasure but it’s super low in carbs and will fill you up easily!

Low Carb Taco Casserole

This low carb taco casserole is full of flavor and super simple!

Ingredients

  • 1
    lb
    ground beef
  • 1/3
    cup
    tomato sauce
  • 1
    tsp
    garlic powder
  • 2
    tsp
    cumin
  • 1
    tsp
    cayenne pepper
  • 1
    can
    green chilis
  • 1
    tsp
    crushed red pepper flakes
  • 1
    tsp
    fresh lime juice
  • 1
    tsp
    onion powder
  • shredded lettuce
  • diced tomatoes
  • 1/2
    cup
    cheddar cheese
  • sour cream

For The Queso

  • 1/2
    cup
    heavy cream
  • 1/3
    cup
    mozzarella cheese
  • 1/3
    cup
    cheddar cheese
  • 1
    dash
    cumin
  • 1
    dash
    cayenne pepper
  • 1
    dash
    garlic powder
  • 1/2
    tbsp
    butter

Instructions

  1. Begin by heating a little bit of olive oil in a large frying pan. 

  2. Preheat oven to 375.

  3. Brown ground beef in small batches. Be careful not to overcook – it will a little more in the oven.

  4. Drain the grease and put the beef aside.

  5. In a large casserole dish, add the beef, tomato sauce, and all of your spices. Mix well. Add half of your cheddar cheese set aside for the casserole and mix well.  Add the green chilis and mix well. Top with the rest of the cheddar and put in the oven for 7 minutes.

  6. While the casserole is in the oven, begin your queso. Melt butter in a small sauce pan.

  7. Add garlic powder, cumin, and cayenne, and mix into the butter. 

  8. Add heavy cream and heat until it’s slightly bubbling.

  9. Begin slowly adding your mozzarella cheese while stirring consistently. 

  10. Add cheddar slowly while stirring consistently. Your sauce should be thick by now. If it’s still a little runny, add a little more cheese.

  11. Take out your casserole and top with the queso.

  12. Put back in the oven for 10 more minutes. 

  13. Serve with lettuce, tomatoes, and sour cream. Enjoy!
