Low Carb Cheese Curds

Alright, I’ll admit it. We’ve spent the last few posts talking about how great we feel since we started eating healthy, and how much we enjoy making low carb meal. The truth? I miss comfort food. Like, real comfort food. The kind you get out of a food truck. Tacos, pizza, french fries, samosas… but what I think I miss the most is fried cheese curds.

If you don’t know what a cheese curd is, you need to look it up ASAP. They’re delicious balls of cheese that are juicy and have a “springy” texture. I won’t go into the exact science of them, but it’s a little different than regular cheese. There’s two dishes that they are typically found in – poutine and in a deep fried little ball of goodness.

If you live in the Midwest, you may be able to purchase cheese curds at your grocery store. Our local Aldi and Mariano’s carries them, but they’re not super easy to come across. If you cannot find packaged cheese curds, you can recreate this recipe by getting cheese sticks that are mozzarella, cheddar, or a swirl between the both. Cut then into fourths and wallah!

Deep fried cheese curds are so juicy when you bite into them and the flavor is melt in your mouth good. I’ve experimented with a few different ways to do this recipe. We finally figured it out and you’ll be so happy to enjoy this recipe for a special treat!

Low Carb Deep Fried Cheese Curds

These deep fried cheese curds are juicy, cheesy, and everything comfort food should be!

Ingredients

  • 1
    package
    cheese curds
    (or cheese sticks)
  • 1/2
    cup
    almond flour
  • 1/3
    cup
    grated parmesan cheese
  • 2
    egg whites
  • 1
    tbsp
    heavy cream
  • 1
    tsp
    garlic powder
  • vegetable oil

Instructions

  1. Begin by whipping your egg whites, garlic powder, and heavy cream in a bowl.

  2. In a separate bowl, mix together your almond flour and parmesan.

  3. Take your cheese curd (or cheese sticks cut into four) and dip them in the egg mixture, coating evenly.

  4. Dip your curd into the almond flour mixture.

  5. Repeat steps three and four with that SAME curd. You should be double coating it. Set aside on a plate and do the same for the rest of your cheese. 

  6. Place your plate of cheese curds into the freezer for half an hour. This part is very important! This will help keep them from melting out in the fryer. If you can leave them in for longer, do that!

  7. With 7 minutes left in the freezer, fill a frying pan with about one inch of oil.

  8. Heat it up the oil. You need it to be hot because you want the curds to brown quickly!

  9. Take your curds out and place them into the fryer, one by one. Flip them once the bottom is browned. Leave them in for only 2-3 minutes, or until brown.

  10. Drain the grease and enjoy! They’re delicious with a chipotle aioli! 🙂
