I love cheeseburgers. If I could eat a gourmet burger for dinner every night without dying of a heart attack – I would. Sadly, that’s not the case. But I’ll let you in on a little secret. Even though I’m on the low carb diet, I still enjoy the occasional cheeseburger. And no, I am not talking about a bunless burger.
We’ve ate so many bunless burgers over the last year that I don’t think I could stand another one. Something about eating a burger without a vehicle is completely unsatisfying.
Recently, we started experimenting with low carb waffles. We’ve made regular waffles, chicken and waffles, pumpkin spice waffles, waffles topped with pizza… The list goes on. Don’t worry. A lot of these recipes are coming. 😉
Our favorite way to use our waffle recipe, though, is to cut it in half and use it as bread. There’s so many horrible low carb bread options out there, and this one easily takes the cake. For The Waffle

For The Burger

ground beef -

onion powder - salt and pepper

Instructions

Begin by taking a tennis ball sized ball of ground beef and flatten it. It’s going to seem a bit big but remember that it’ll shrink as it cooks! Do this for as many patties as you want. We did four because we wanted doubles.

Top with spices.

I cooked my burger in a frying pan because it’s too cold to grill right now! If you want to grill this burger, that’s perfectly fine.

Heat butter (yes, butter!) in a frying pan. Add your burger pattys and cook on medium high on the first side for 3-4 minutes.

While your burgers are cooking, begin making your waffle mix. Add all ingredients into a mixing bowl and mix until smooth. It should be a pancake batter consistency. If it’s too think or not thick enough, add water or almond flour. Turn on your waffle maker to heat.

Flip your burger patties. After about two minutes, or when your burger is almost cooked, add your cheese slice. Cook until done, or 145 degrees for medium rare.

Take off burgers and put aside to rest.

Begin making your waffles. We typically overcook them a little bit so that they hold up better. Cut your waffle in half and add patties and toppings.
