This sandwich is living proof that just about anything goes good with a scoop of guacamole. Not only is this sandwich delicious, but it’s a healthy alternative to some other sandwiches. If you want to substitute the brioche bun for a lettuce wrap or whole wheat, it’s yummy that way as well!
We like to make our guacamole using Frontera guacamole mix and it always comes out so delicious. You can find it at most grocery stores and it makes a big batch of guac easy and affordable.
I was never a huge grilled chicken fan until we came across this recipe. Now I can’t get enough of it! Let’s get started!
Guacamole Grilled Chicken Sandwich
This sandwich is proof yet again that guacamole can go with just about anything!

brioche buns -

lb
boneless skinless chicken breasts -

lime -
1/2
tsp
cayenne pepper -

avocados -

Frontera spicy guacamole mix -
1
package
sliced cheese
(Your favorite kind!) -
salt and pepper
to taste -
1/16
cup
butter
Instructions

Cut your chicken into thin patties.

Season the chicken with salt and pepper, cayenne, and juices from 1/2 of the lime. Let marinate while you prepare the guacamole.

Combine avocados, guac mix, and the juice from the other half of the lime in a large bowl. Follow instructions on the back of the mix. We like to use Frontera. It’s so simple and always comes out so tasty!

Grill chicken for 4 minutes on each side. When there is about one minute left on the second side, add a slice of cheese. We did it with both pepperjack and provolone and both were delicious.

Toast your brioche buns in a frying pan with a little bit of butter on medium heat for one minute.

Top your grilled chicken with guac and serve on the bread. Enjoy!
