You know what my favorite thing in the whole world is? Cheese. By far. So it’s no surprise that queso is my favorite dip to make at home.
I could put cheese on almost anything, and totally would if it wasn’t so dang unhealthy. Although, that doesn’t mean I can’t indulge every once in a while. 🙂
We’ve made a lot of different variations of queso – in fact, we have one right here that you can check out. It’s even easier than this one and only has a couple of ingredients. That recipe is from our early blogging and early queso making days, so we decided to give it another shot.
This queso is packed with flavor and if Sean let me, I’d eat it with a spoon.
Okay, not really. But still. It’s that good.
The jalapeno gives it an extra kick of flavor that the last recipe was lacking. If you don’t want a whole lot of spice, be sure to take out the seeds. Let’s get started!
Best Ever Easy Queso
This queso is packed with flavor and only takes a few simple ingredients!
Ingredients

cup
heavy whipping cream -
1
tbsp
finely diced jalapenos -
1/4
cup
mozzarella or chihuahua cheese
shredded -
1/4
cup
cheddar cheese
shredded -
1/2
tsp
minced garlic -
1
tbsp
butter
Instructions

Begin by melting the butter in a sauce pan on medium heat. Be careful not to bring the heat too high, or you’ll burn the butter!

Add the minced garlic and jalapenos and cook until fragrant.

Add the heavy whipping cream and bring to a slow boil.

Slowly add the cheese while consistently stirring. Be sure not to add it too fast, or it will seize. Go back and forth between the two cheeses.

Once it is as thick as you would like it, turn off the heat and let sit for one minute.
