As the holidays are approaching, we’ve been struggling more and more to get a homemade dinner on the table every night. By the time we get home, it’s already dark outside and we’re often tempted to order delivery! Therefore, I’ve been trying to find easier recipes to help out in our struggle. These easy, cheesy meatballs are so simple, you won’t believe it.
It’s the type of recipe that warms you on a cold winter night. It’ll satisfy the whole family!
It’s a good recipe for everyone, but it’s also super low in carbs if you’re on the keto diet! We use whipping cream as the base for the sauce instead of flour. You won’t even notice that there’s no carbs in it – promise.
When we make cheese sauces, we typically like to use Kraft shredded cheese. Any bagged shredded cheese will do, though. It’s important that the cheese is the bagged kind because of the starch that they use to keep it from sticking. If you’re going to use fresh cheese and grate it yourself, I suggest tossing it in ½ tsp of corn starch.
Let’s get started!

Instructions
-
Begin by cooking the frozen meatballs according to the package. If they’re raw meatballs, we like to bake them in the oven at 350 for 15 minutes, or until they’re 160 degrees internally.
-
Put cooked meatballs aside.
-
In a small sauce pan, melt butter. Add minced garlic and cook until fragrant (about 45 seconds to a minute).
-
Add heavy cream and put heat to medium.
-
Once the heavy cream begins bubbling, slowly add in your cheese while stirring consistently.
-
Add cheese until it’s thick like alfredo.
-
Put your meatballs in a casserole dish and top with your cheese sauce.
-
Top with additional cheese and the parsley, garlic powder, and red pepper.
-
Bake for ten minutes at 350 degrees. Enjoy!
