Today, I got the irresistible urge to eat a cheeseburger. I’ve been eating pretty healthy lately, so I was trying my best to fight that urge. After a lot of fighting, I finally gave in. But instead, I decided to give the classic cheeseburger a healthy twist.
We LOVE spicy food in our home. These cheeseburger stuffed jalapenos feel like a spicy, delicious guilty pleasure, but without all the unhealthy carbs of a traditional burger. When hallowing out the jalapenos, try to get all of the veins and seeds out if you prefer less spiciness.
This recipe is low carb, full of fiber, and great for parties! We plan on serving it as a superbowl appetizer. If you want to serve a crowd, it’s super easy to increase the ingredients and make a ton of them.

Cheeseburger Stuffed Jalapenos
These cheeseburger stuffed jalapenos are low carb, spicy, and will satisfy your cheeseburger craving!

jalapenos
sliced in half long ways -

ground beef -

shredded cheddar cheese -

tsp
garlic powder -
1
dash
of salt and pepper -
1
tsp
olive oil -
1
tsp
soy sauce -
1
dash
onion powder
Instructions

Preheat oven to 350.

Begin by slicing your jalapenos long ways. Hollow them out, removing all seeds if you don’t want them too spicy.

In a medium frying pan, heat olive oil up.

Add ground beef. Add garlic powder, onion powder, salt, and pepper. Brown ground beef.

Drain excess oil with a paper towel and stuff the peppers with the ground beef. Add a splash of soy sauce on top of each one. We literally used one drop on each slice.

Bake for 20 minutes.

Take them out add top with cheddar cheese. Pop them back in the oven for an additional five minutes, or until cheese is melted.
