I’ve mentioned before that Mexican food is just about my favorite. We’ve found a few different ways to replace tacos with low carb options (more recipes to come), but we’ve had a hard time finding a replacement for rice. That is… until we found cauliflower rice.
Cauliflower rice is great, but let’s be honest: it’s not rice. The flavor of cauliflower is really strong and it’s hard to convince yourself that you are not, in fact, eating a vegetable.
I’ve tried cauli rice with just about everything. Cheese, garlic cream sauce, parmesan… nothing tastes quite right. Until I did it with the ingredients of Mexican rice.
We have a recipe for normal Mexican rice that you can find here. It’s super delicious and super simple! This recipe is just as simple and changes out the rice for cauliflower rice.
You can either do this recipe with fresh cauliflower or frozen riced cauliflower. Personally, I prefer to do it with frozen riced cauliflower because it’s a whole lot easier. Grating cauliflower can be a real pain! But I understand the want for fresh veggies!

Mexican Cauliflower Rice
This Mexican cauliflower rice is delicious and you can almost convince yourself that you’re not eating low carb!

frozen riced cauliflower -

cup
tomato sauce -
1
tsp
minced garlic -
1
tbsp
butter -
1
tsp
cumin - salt to taste
Instructions

Begin by cooking the frozen riced cauliflower by the bag instructions. If it is a steamer, go ahead and cook it in the microwave.

In a large frying pan, melt butter and add garlic. Brown garlic until fragrant.

Add tomato sauce and cumin. Stir well.

Add riced cauliflower and mix well.

Cook covered on medium for five minutes.
