Emma and I have been embarking on a low carb diet the past few weeks, and with that we have been racking our brains for new ideas while following a diet that limits what we are able to eat. With this challenge, comes an opportunity to try new things and new combinations of things that we may have never come up with have not been on this new journey.
We’ve said before in past posts, guacamole added to anything will make said dish better. For this recipe, we created a simple healthy snack that combines guacamole’s maker, the humble avocado, with none other than delicious bacon. The creaminess that is an avocado plays a perfect foil to the salty, porky, crispy bacon – the result, an addicting marriage of foods that most love but don’t love together.
Although I’m not a ranch lover like Emma does, I must admit, these taste delicious dipped in your favorite brand of ranch.

Bacon wrapped avocado slices
This healthy and protein packed snack has a kick of heat and is a great option for a weekday side or an appetizer for any party or event.

Ingredients

avocados -
1
packaged
bacon
stretched and sliced in thirds -
1
tsp
garlic powder -
1
tsp
cumin -
1
tsp
chili powder -
1
dash
cayenne pepper
optional -
1
package
tooth picks
for serving
Instructions

Preheat oven to 425 degrees

Cut avocados into small slices and separate them from their skins

Cover the avocados with the garlic powder

Stretch the bacon and cut each slice into 3 or 4 equal pieces

Wrap the avocados with slices of bacon – make sure the crease of the bacon is on the bottom of the pan, not allowing it to unwrap

Place evenly on baking sheet

Apply cumin, chili powder and cayenne pepper to wrapped avocado slices

Place in oven for 15 minutes.

Serve and enjoy!
