This month, we welcome back Marta Rivera for more of her meal plans. Marta is a trained chef, mom of twins, and Army wife – and she is also one of our Simply Recipes contributors and recipe testers!
October creates mixed emotions when you live in the center of Texas. On one hand, the calendar tells you it’s autumn — as does the “pumpkin spiced” everything — but when the temps are still in the high 90’s, you find it hard to get into the fall spirit.
For my meal plan this week, I’m going to conjure the ghost of autumn. How so? With meals I can double and freeze for the holidays, as well as hearty dishes perfect for cooler temps.
By now, you should see turkeys available in your grocery stores so grab one while you’re on your grocery run. No need to wait until Thanksgiving to have turkey — there are plenty of recipes on Simply Recipes that put those birds to good use! October is also sweet potato and broccoli season, so I’m making use of them in this week’s plan.
