Fall is finally in full swing! I love fall and all things that are considered “cold weather food.” My all time favorite fall flavor is pumpkin spice. These pumpkin spice waffles are perfect to satisfy your cravings.
Not only is this recipe oh so delicious, it’s also low carb, gluten free, and to die for! In less than 20 minutes, you can have a breakfast that the whole house will adore. Every once in a while, we have them for dessert. They’re that good.
One waffle is usually enough to fill me. The eggs and the almond flour make this recipe super satisfying!
The waffles are actually really fluffy and it’s almost like a normal, gluten and carb filled waffle. I won’t lie to you and tell you that it’s exactly the same – but it’s pretty dang close.
Sometimes, we change out the sweet ingredients (brown sugar, cinnamon, pumpkin, etc) for more savory ingredients such as garlic powder and salt. We then use the waffles as a vehicle for other foods! Take a look at our keto waffle bun burger for a good example.

Low Carb Pumpkin Waffles
These low carb pumpkin waffles are a perfect fall treat for those living a keto lifestyle!

almond flour -

pumpkin puree -

tsp
pumpkin spice -
1
tsp
cinnamon -
1
tsp
vanilla extract -
1
tsp
stevia brown sugar -
1 1/2
tbsp
heavy cream -
1
tbsp
vegetable oil -
1
tsp
baking powder -
2
eggs
Instructions

Begin by mixing together all of the dry ingredients.

Add the eggs and mix well.

Slowly add in vegetable oil and heavy cream.

At this point, the mixture should be of pancake batter consistency. Add heavy cream or a little more flour to adjust.

Cook for 3-4 minutes in your waffle maker, or until browned.

Enjoy with sugar free syrup and butter!
