As of recent, we’ve been trying to stick to a low carb diet. It hasn’t been an easy adjustment, but with the new year, we’re dieting as part of our resolution.
I’ve done a low carb diet before and had a lot of success, so we’ve decided to go that route. This broccoli cheddar soup is perfect for lunch when on a low carb diet. If you’re not on a low carb diet, do not shy away from this recipe. It’s full of so much flavor and is creamy and delicious. Without the use of corn starch or flour, it keeps it a little healthier.
This recipe is super simple. There’s only seven ingredients and only takes about 25 minutes to put together. It’s perfect for a cold winter day. Here in Chicago, it’s currently -10 degrees, so this recipe was perfect.

Super Simple Broccoli Cheddar Soup
This broccoli cheddar soup is flavorful, delicious, and low carb!

broccoli
cut into small florets -
1 and 1/3
cup
heavy cream -
3
cups
chicken broth -
1
carrot
peeled and cut into small slices -
1
tbsp
butter -
1/2
tsp
diced garlic -
1
dash
onion powder -
1
package
shredded sharp cheddar cheese
Instructions

Saute garlic in the butter in a large pot.

Combine heavy cream, chicken broth, onion powder, broccoli, and carrots. Bring to a boil and boil until the vegetables are tender.

Bring the heat down to low and begin slowly adding cheese while constantly stirring.

Turn off heat and let sit for five minutes and serve!
