Summers are a bit chaotic with my kids being home all day AND when it’s scorching outside, it’s hard to find the motivation to cook anything. Thankfully, I have a trusty grill that has saved my sanity more times than I can count, especially since I cook for eight people every night.
Cooking for so many people definitely comes with some challenges, and when planning my menu, I need meals that are fast and healthy, and I definitely need them to stay within a reasonable budge.
Enter: CHICKEN! It’s my go-to meat of choice because it can be grilled and served in a variety of ways (think kabobs, drumsticks, on top of salads!) and it’s a healthy protein that doesn’t break the bank.
It’s no wonder why chicken + grilling is my formula to success to getting dinner on the table during these summer months!
